n the villages of Vilpian, Siebeneich and Terlan asparagus has been grown for centuries. Today 15 asparagus growers in Terlan plant approx. 10 ha of high quality asparagus and sell it under the trade mark and hallmark of excellence Margarete. The elegant looking and extremely mild tasting Terlan asparagus is very popular with the connoisseurs of this white spring vegetable. In April and May several restaurants invite visitors to enjoy classic and creative asparagus dishes made with the valuable Margarete asparagus. Fresh asparagus with home-cured ham, boiled potatoes and Bozner sauce is one of the classics. The meal is accompanied by the fine, mineral containing Terlano “asparagus wine” (Sauvignon) from the Terlan winery.

Springtime for your palate When spring arrives, it's time to celebrate. Especially in the valley, where the first harbingers of spring are known to bloom and chirp a little earlier than in the mountains. Every Wednesday we meet us in the farm of the Schildhof Obergereuth. Together we prepare South Tyrolean bread with spices and wheat from our farm. While the dough is rising and resting, we visit our mill from 1831. The bread and three recipes are taken home. While the bread is baking in the oven, we dedicate ourselves to lunch: a generous and varied platter of cheeses from the organic cheese dairy Schupferhof, various types of bread from our farm and our medlar jelly. ONLY IN GERMAN OR ITALIAN Niedereben Farm is situated at an altitude of 634 metres on Nörderberg mountain. Benefiting from the advantageous climate, olives, grapes and cacti all flourish here. The Hofer family supplies the local organic specialist retailer (Biokistl) with its fruit and vegetables and sells a variety of home produced, typical South Tyrolean organic products in their own farm shop. Cows, pigs, quails, ducks, geese and chickens all feel like “pigs in clover” on the farm! This introduction to the long history of the farm gives visitors an insight into livestock husbandry and wine growing on the Vinschgau’s Nörderberg mountain and shows the route taken from the first olives to the production of the farm’s own olive oil. The following products are available to buy directly from the farm shop: speck (bacon), salami, smoked sausages, cooked herb-crusted ham, Coppa ham, farmer’s speck, seasonal fruit and vegetables, and in the autumn months chestnuts and pumpkins, apple juice and Vernatsch wine.

Every Wednesday between 8.30 am to 12.30 am, the pedestrian zone and Peter-Glückh-Platz in Malles/Mals bustle with activity. Fresh local produce, such as fruit, berries and vegetables, cheeses, bacon and bread types, jam, vinegar, juices and herbal teas, are always available for sale at the market. There are also craft and handicraft products made of stone, wood or felt for sale, as well as textiles, leather goods, plants, and equipment of all kinds for house and garden. From June to September, the market is held together with the farmers' market in the pedestrian zone, where producers from the area offer bacon and cheese, fruit and vegetables. The surrounding guesthouses and restaurants offer special dishes to the respective market focus.

Local and seasonal, straight from the producer. Farmers from the surrounding area bring their own farm produce to the Brixen old town centre. Depending on the season, fresh fruit and vegetables, dairy products, eggs, flowers, honey, homemade jams and pasta sauces, refined distillates and organically grown herbs as well as wooden handicrafts are offered on Wednesdays and Saturdays. From April to October, local associations prepare fresh tirtln (fried stuffed pastry) on site on a weekly basis. This means that every Saturday is also a culinary experience. This market has been a popular, lively meeting place for locals and guests for 30 years.
