3 handfuls of firm white bread or breadcrumbs (Knödelbrot)
140 g grey cheese from South Tyrol
100 ml milk with the South Tyrolean seal of quality
2 eggs with the South Tyrolean seal of quality
20 g flour with the South Tyrolean seal of quality
20 g buckwheat flour with the South Tyrolean seal of quality
1 tbsp parsley
600 ml meat broth
20 g onions, cut into rings
Preparation
Time to prepare: 40 min.
Cut the bread into cubes and place in a dish. Dice the grey cheese and combine with the bread. Whisk the eggs with the milk and add them together with the flour, buckwheat flour and parsley to the breadcrumbs. Season with salt and pepper. Loosely combine all the ingredients into a dough and knead. Leave to stand for 15 minutes. Shape into dumplings. Press gently to flatten the dumpling balls. Sauté both sides lightly in butter until golden brown. If desired, boil for 8 minutes in boiling, salted water. Sauté the onion rings in a frying pan until golden. Serve the cheese dumplings with a meat broth and roasted onion rings. Preparation time: 20 minutes.
