From field to plate

"Farm to table," explains chef Soufien from Restaurant Sprechenstein near Sterzing, "is a philosophy in which the ingredients come from local farmers and producers." To this end, he maintains close relationships with his partners in the neighbourhood and even breeds his own Wagyu cattle. He was inspired by a longer stay in France, where upmarket restaurants use local produce as a matter of course. For Soufien, South Tyrol, with its Alpine-Mediterranean climate and the farmers' in-depth knowledge, offers ideal conditions for precisely this approach. This is where down-to-earthness meets sophistication - and you can taste it.
